Ghana

Ghana is a West African nation next to Togo, Burkina Faso, and the Ivory Coast. English is the only official language, but almost half the population speaks Akan. It has an Atlantic coastline, and the largest reservoir in the world at Lake Volta. The Kejetia Market in Kumasi is one of the largest, if not the largest bazaars in West Africa, and many Westerners hire a guide to navigate its astounding variety of stalls and offerings.

Starchy staples in Ghana include millet, sorghum, yams, sweet potatoes, and cocoyam. Ayoyo, spinach, wild mushroom, okra, garden eggs (eggplant), and tomatoes are popular vegetables. Seafood offerings are a bit of a treat, and may include crab, shrimp, periwinkles, or octopus. Try groundnut soup or waakye, rice and beans. You may be able to find vegan Ghanaian food, fresh juices, and organic African, Caribbean, or West African restaurants. Live it up with vegan Italian food and some wine or beer. Salute!
