Nicaragua

Nicaragua is the largest country in Central America by geographical size. A diverse country with Pacific and Caribbean coasts, the official language is Spanish but Miskito, Rama, Sumo, Miskito Coastal Creole, Garifuna, and Rama Cay Creole are also recognized. The terrain includes mountains and coastal lowlands. Nicaragua has a tropical climate and volcanoes. Native animal species include the loggerhead sea turtle, the bushy-tailed olingo, and Baird’s tapir. Mainstays of the economy include agriculture, tourism, and informal services like carpentry and other family trades. Nicaragua is flagging behind most other countries in the Americas financially.

Granada, the oldest city in the country, is a picturesque colonial city with many churches and great architecture. For some real ecotourism, vist Reservo Chacho Verde on Isla Ometepe, a nature reserve where you can kayak, swim, hike, look around Concepcion Volcano, or relax on volcanic sand beaches. You can rent organic farms or cabins there. Masaya’s town center contains the great Mercado Artesanias, where you can peruse high-quality crafts in an imposing Gothic structure.

Rice and moreso corn are common starchy staples. Typical vegetables include peppers, beets, cabbage, and chayote. Fish, beef, and pork are eaten frequently. Soups are popular. Some seafood soups include the crab-filled Sopa de Punche or the seven seas soup, Sopa Siete Mares. Try arroz a la valenciana, similar to a paella, and usually cooked with beer. If you’re in luck, you can find some whole foods cooking, a light Middle Eastern bite, or a juice bar. Indulge in a delicious treat like Brazo Gitano de Naranja y Nueces (pudding with orange and nuts) or buñuelos (fried yuca and rice flour served with honey). Mmmm!
